Pokemon takes place on an alternate universe Earth. In Gen 1 there are several allusions toward the Pokemon world being Earth. Lt. Surge is referred to in game as "The Lightning American", the diaries in the Pokemon Mansion talk about finding Mew in Africa as well as referring to mew being able to give live birth, and Kanto itself is based on the real world Kanto region.
I'm not really sure of the myths behind it. But ground cannot be created only moved, he would be able to move the mountains to create more land. Equally there would still be the same amount of water that would have to go somewhere. (But I'm not sure if this applies to pokemon, after all since Groudon is a God I'm sure he can do what he likes)
yeah, honestly we are trying to add science to a game where pokemon can spout lava from their backs to make more land by cooling it, and add more water my spitting out infinite amounts.... this wont end well for science

I always thought of this, also about team Magma's goal that would cause change of climat on whole planet when there's more of land, but I feel sorry to myself I don't remember fully how it goes...and I lack english words nevermind.

Magma's plan is to use Groudon's powers - presumably involving lava - to expand the land. Lava gets cooled by the water, solidifies, becomes land. Magma's plan works, but is sorta dangerous. Aqua's plan would barely do anything.
In his defense, everyone in the pokemon world seem to leave school at the age of 10..
Pokemon logic surpass science tho. Blastoise Hydro pump? What, does he have a black holw in that shell that absorb water from another dimension? The entire pokéglobe should be drowned by now, all things considered...
